thanks for the podcast, I'll definitely have to give that a listen! I just did a deep dive on an agave spirit called raicilla recently, and I think another really interesting part of agave spirits is how they're regulated. How the DO/NOM works and is implemented in Mexico compared to similar variations in other countries is pretty fascinating. There's a great interview with founder of Mezonte in Guadalajara about it.
Big fan of Raicilla! I spent time in Guadalajara visiting Raicilla Tabernas. Agreed on the DO/NOMs. Did you publish the deep dive on Substack? I want to check it out.
I did! it was four part series (😅) where I visited two tabernas over in Cabo Corrientes and talked with some raicilleros and folks in the coastal raicilla world:
Ooooooh love these agave/mezcal resources! I’ll check them out. When people taste (after) for the first time, they often say it reminds them of Mezcal. That’s the smokiness from the black cardamom! Love Parch, too. So so so yummy. 🤘🏽
Parch's Spiced Piñarita is actually my fave :)))
Soooo good!
