No & Low Guide to TOTC 2025
If you're a mindful drinker, and plan on making the trek to New Orleans between July 20th to July 25th for Tales of the Cocktail, here is your agenda.
Tales of the Cocktail, affectionately referred to as Tales, is an annual event attended by the global drinks community to celebrate the lore and practice of making cocktails. The week is jam-packed with everything from educational seminars to late-night dance parties.
If you’ve attended before, you know it’s also a booze-fest—filled with tastings, delicious drinks, and plenty of good reasons to imbibe. That’s exactly why some level of caution is advised. You can’t go to every party, and you can’t finish every drink—a lesson as true in life as it is at Tales. Believe me, I’ve tried. That’s why I recommend drinking mindfully throughout your Tales experience. This guide is one easy way to do that, but it’s also designed for those whose main focus is no- and low-alcohol drinks.
Before you dig into the guide, I’d like to thank our sponsors: Mindful Drinking Fest, Tradition Beverages, and Heineken 0.0. We couldn’t do this without their support. Be sure to join for our Networking Event on Tuesday at 1 PM CDT to sample both.

The phrase "I am neurodiverse" is gaining traction, but what does it really mean, and how does it shape the workplace? This seminar will break down the stigma surrounding neurodiversity, which often carries misconceptions of disorganization or incapacity, and shed light on the diverse range of neurodivergent conditions, from ADHD to dyslexia. Discover why neurodiverse individuals are drawn to hospitality jobs and how the industry’s dynamic, creative environment offers a platform for their strengths to shine.
While the world is largely designed for neurotypical individuals, hospitality provides unique challenges that can overwhelm those with neurodivergent traits. In this panel discussion, experts, activists, and professionals will share their experiences and strategies for thriving in a neurotypical world. Participants will explore ways to support neurodiverse individuals in the workplace, providing a deeper understanding of how inclusivity benefits everyone. This seminar will also highlight practical tools and coping mechanisms for neurodiverse employees and offer actionable tips for creating a truly inclusive, thriving hospitality environment.

Laws of Extraction: Liquid Brilliance from Solid Ingredients
Time: 11:30 AM – 12:15 PM
Location: Salon III, The Ritz-Carlton, New Orleans
Presenter: Seth O'Malley, Founding Distiller, Wilderton Aperitivo Co.
From gooseberries in Summer to wild mushrooms in the Fall, it's easy to get excited about beautiful plants and fungi. They inspire us and offer ways to celebrate our locales and lean into the season. But unlike chefs, bartenders have the curious requirement of turning their bounty into liquid before they can use them.
Between the solid and liquid forms lies the process of extraction – and the crucial choice of extraction method from a dizzying set of options. The simple quest to make a grasshopper from your peppermint patch gets complicated. Get it wrong and you'll have a dull, murky, or otherwise underwhelming result. Overthink it and you may never return from the mystical realm of rotovaps and sonicators and emulsifiers.
In this seminar I'll survey extraction methods and provide a simple way of determining which method is right for a given ingredient. The results can take the form of oleos, syrups, tinctures, glycerites, and reductions. I'll show how the infinite diversity of natural ingredients can fit into an easy framework for the purposes of extraction, while making the case that simple processes tend to yield the best results.

In December 2024, UNESCO named koji fermentation an official part of Japan’s intangible cultural heritage. This recognition reflects centuries of knowledge passed down through master brewer-distillers using apprenticeship systems to create sake, honkaku shochu, and ryukyu awamori.
This panel explores the historical, cultural, and technical foundations of koji fermentation and its evolving place in global spirits. Attendees will learn how koji shapes Japan’s indigenous alcoholic beverages—from the biochemical processes behind it to its impact on aroma, flavor, and texture.
Topics include:
The history and significance of koji fermentation in Japan
The science of how koji breaks down starches into fermentable sugars
Traditional production methods for sake, shochu, and awamori
How koji-derived spirits differ from their Western counterparts
The role of koji in contemporary cocktail culture and bars around the world
The panel aims to provide deep context for understanding why this fermentation method is not just a technique, but a cultural treasure—essential to Japan’s identity and increasingly relevant to bartenders and beverage professionals worldwide.

It’s entirely possible I missed a few happenings. If you notice one, please leave a comment and I’ll add. For the record, there will be plenty of events that have No & Low options, but this is more focused on events that are thematically or energetically linked to No & Low.
Also, a reminder: most events require a pass of some sort, whether tasting pass or seminar pass, and parties frequently require invites. Download the Whova app for more specific instructions, directions, and all necessary passes.
Such a helpful guide - thank you! Hoping to swing by your event while we're there!
